Disappearing Pulled Chicken Lettuce Wraps

They’re re really that good. Fuel your craving for a Mexican feast with these guilt-free bad-boys!  Super easy, super clean, and awesome as left-overs. Makes the perfect, high protein, post-Rev workout muscle repair meal.   MAKE IT HAPPEN: Poach or grill 3 chicken breasts until cooked through. Let cool slightly, then put in a mixing bowl. Shred the chicken using two forks, pulling outward. Meanwhile… In a medium saucepan over medium heat, melt 1 tbsp of coconut oil. Add 1/2 diced red onion. 1 clove crushed garlic. Sautee till onion is soft and translucent. Add: 3 medium sized crushed tomatoes ( I pulled mine off the vine from the garden and zipped in the Vitamix) 1.5 tsp cumin 1 tsp chili minced chipotle pepper (optional) Let simmer uncovered for about 10 minutes…longer will dry the chicken out.   Serve on fresh lettuce leaves with shredded old cheddar, fresh guac, tomatoes, lime, and shredded cilantro!  Whatever floats your boat. Meet hardcore Cambridge Revver Louise. She’s mom to Thomas, 14, Matthew, 7 and Benjamin - just over 6 months.  This 38 year-old mama didn’t waste any time post-baby…we’re pretty sure the docs cut the cord and Louise jogged promptly to the bands! Revkor was just what Louise says she needed post baby-Benjamin.  “By week-2 of Revkor, I already felt my body strengthen.  I decided to take a leap and try revMIX, where I heard my instructor say ‘you can do anything for a minute’!   That motivating phrase is where I focus my thoughts.  Unless my body physically cannot go anymore, my new mantra is now this saying. School’s Out! Teachers Rev it Up!

Erin Moraghan runs Revkor™ with her superstar partner Angela Rivard. She is a writer, Revkor™ instructor, yoga teacher, and business-builder. But who really cares? We’re here to talk about kale and muscles. Let’s do this!   As a long-time yoga teacher, one of my favourite things about getting back to my fitness roots and instructing Rev classes is the sense of community and non-stop chatter in the room!  In yoga we tend not to talk in the practice room, so at Moksha Yoga Cambridge, which offers a great roster of Revkor™ programming, students can’t get enough of the opportunity to connect. Meet two of my favourite bubbly Revvers: Sarah and Kayla!  Colleagues and friends, these two are so much fun to have in the room because they bring 100% energy and non-stop smiles to the bands. As two primary school teachers, Kayla and Sarah chat about their love for Revkor™, how their workouts make them (even more) amazing at their jobs, and how they feel in their new Revved up bodies! Revkor: Look incredible, FEEL unstoppable!

Meet Courtney, another winner of our Revkor™ Summer Shred.  There’s a whole bunch of things we love about Courtney and high on the list is what a shining example she is to people in their early twenties.  So many of us head off to school and fall right off the rails on the fast-food and beer train, at a time in life when we should be feeling young, vibrant, and up for anything.  Packing on pounds and losing muscle early in adulthood doesn’t feel good but so many people do it, and fall into a rhythm of unhealthy living.  Not this girl - she chose goodness. Courtney went off to travel this year for a couple months, enjoying sunshine and good times but ready to get back to the bands.  Lucky to have a seriously incredible Rev-mom (Lise won our 2014 Holiday Shred!), this Shred champ and her motivating sidekick tackled the challenge with unstoppable energy and the results are obvious.  We’re so proud of you Courtney!  You’ve chosen healthy, awesome and strong. YES! “I had a lot of people tell me that doing this challenge was ridiculous & pointless because “you don’t need to lose weight”.  Well, I may appear that way because of my natural body structure (thanks mom!) however I felt in no way thin, fit, or toned like I wanted to be.
