Cozy Chicken + Potato Stew

1 lb chicken thighs
4 potatoes, peeled and cubed
5 cups chicken broth
3 carrots, diced
1 can crushed tomatoes
2 stalks celery, diced (optional)
1 yellow onion, diced
2 bay leaves
1/2 cup chicken marinade (use preferred one)
1/4 tsp pepper, or to taste
1 tsp smoked paprika
1 tsp salt, or to taste
1 tsp oregano


  • Place all ingredients in your crock pot. Turn to low heat and cook for 7-8 hours.
  • After 8 hours, remove the chicken thighs and shred using a fork or cut chicken into small pieces instead.
  • Add the cut (or shredded) chicken back into the stew.
  • Option to season with additional salt and pepper to taste.
