These Ginger Meltdowns are your answer when you just can’t take it anymore. Loaded with healthy ginger, iron-rich molasses, and a few other whole, good for you ingredients, this is sure to become a standard go-to for anyone who loves a good, chewy ginger cookie in their world.
Make it happen:
- 1 + 1/4 cup almond flour
- 1 tbsp coconut flour
- Healthy dash pink salt
- 1/2 tsp baking soda
- 1.5 tbsp ground ginger
- 1/4 cup melted coconut oil
- 1/4 cup organic molasses
- 2 tbsp Quebec maple syrup : )
- 1/4 cup diced crystallized ginger pieces
Preheat oven to 350. Blend dry ingredients. Mix remaining ingredients in separate bowl then add dry and mix until it gets thick/sticky. Drop onto parchment lined baking sheet in small one inch balls, they really expand. Bake for about 8 minutes and let cool.
