Carmelized Broiled Grapefruit

Carmelized Broiled Grapefruit Recipe from Lavinia Todor INGREDIENTS: 1 grapefruit 2 tbsp honey ¼- ½ tsp ground cinnamon (and/or ginger) strawberry slices (or banana slices) Coconut yogurt (for serving, optional) MAKE IT HAPPEN: Heat oven to broil. Cut grapefruit(s) in half. Using a small serrated knife loosen the grapefruit sections from the membrane. Place the grapefruit halves on a baking sheet lined with parchment paper. In a small bowl, combine honey and cinnamon( and/or ginger), mix well. Divide the honey mixture between the two grapefruit halves and spread on evenly. Place strawberry (banana) slices on top (option to coat them a little with honey as well). Place under broiler until bubbling and slightly browned in spots, about 4 to 6 minutes. Watch closely so it doesn’t burn. Serve warm with favorite yogurt....

Zucchini Spaghetti Squash

Zucchini Spaghetti Squash Recipe from Lavinia Todor Ingredients: 1 large zucchini, sliced 1 spaghetti squash, medium size 4 garlic cloves, minced 1/2 cup almonds, toasted 3 tablespoons olive oil salt and pepper MAKE IT HAPPEN: Preheat oven to 450°. Cut the squash in half, scrape out the seeds. Brush oil over the cut sides of the squash as well as the baking sheet and place the squash cut side down. Bake for about 35-45 minutes. Remove it from the oven when it’s cooked through and soft, and let it cool. After squash cools, scrape the inside with a fork and place everything in a bowl. Set aside. Heat olive oil in a large skillet on medium-high heat. Add sliced zucchini and minced garlic and saute for about 3 minutes, stirring, on medium heat. Season with salt and continue cooking for another 3-4 minutes, covered, occasionally stirring, until zucchini softens and browns a bit. Add spaghetti squash to the skillet with zucchini and mix, on low heat. Add salt and pepper, to taste. Top with toasted almonds and baked chickpeas. If you’re not avoiding dairy, add some shredded cheese to the mix....

Roasted Garlic Hummus

Roasted Garlic Hummus Dip Recipe from Lavinia Todor Ingredients: 1 3/4 cups canned chickpeas, drained and rinsed 1/4 cup water 1/4 cup tahini, stirred well 1/4 cup olive oil 1/4 cup grated parmesan cheese (optional) 4 roasted garlic cloves, chopped 2 tbsp freshly squeezed lemon juice 1/4 tsp fresh ground pepper 1/4 tsp cumin Sea salt, to taste Paprika (for garnish; optional) Spiced Pita Wedges 4 pitas 3 tbs olive oil 1/2 tsp garlic powder 1 tsp lemon pepper sea salt MAKE IT HAPPEN: Place chickpeas into a food processor and pulse until they are mashed. Add the chopped garlic, olive oil, tahini, parmesan, pepper, cumin, and lemon juice plus 3 tablespoons of the  water. Puree until smooth, adding additional water 1 tablespoon at a time until a desirable consistency is reached. Continue to puree for another minute or two until completely smooth, scraping down the sides as needed and seasoning with additional salt to taste, if necessary. At this point, you may discard any leftover water. Spoon the hummus into a bowl and drizzle with olive oil, paprika and a sprinkle of fresh ground pepper if desired. Beef Spinach Stew Recipe from Lavinia Todor Ingredients: 2 lbs beef roast, cut into 1″ cubes 1 large onion, coarsely chopped 4 large carrots, chopped 3 cups vegetable (or chicken) broth, low sodium 2 cups spinach (or greens like swiss chard) 1 cup peas, fresh or frozen (optional) 1 tbsp olive oil, 1 tsp salt 1/2 tsp black pepper 1 tbsp cornstarch 8 garlic cloves, minced 3 bay leaves 1 cup rice (or quinoa), uncooked 2 tsp garlic powder (or 1 garlic clove, crushed) 1/3 cup dill or parsley, chopped MAKE IT HAPPEN: Preheat skillet on medium heat and coat with oil. Add onion and carrots, cook for a few minutes. Set aside in a bowl. Return skillet to medium - high heat and add beef and sprinkle with salt and pepper. Cook until golden brown. If your meat releases a lot of juices, increase heat and let it cook off or drain. Watch closely not to burn. In a medium bowl whisk together broth and cornstarch, pour over meat. Add spinach and previously cooked onion and carrots, garlic, bay leaves and stir to combine. Bring to a boil, cover, reduce heat to low and cook for 45 minutes. Meanwhile, cook rice (or quinoa) as per package instructions. When meat is done, discard bay leaves and add garlic powder or freshly crushed garlic. Add cooked rice (or quinoa), peas if using and fresh herbs, gently stir and serve warm....
