Zucchini Spaghetti Squash Recipe from Lavinia Todor Ingredients: 1 large zucchini, sliced 1 spaghetti squash, medium size 4 garlic cloves, minced 1/2 cup almonds, toasted 3 tablespoons olive oil salt and pepper MAKE IT HAPPEN: Preheat oven to 450°. Cut the squash in half, scrape out the seeds. Brush oil over the cut sides of the squash as well as the baking sheet and place the squash cut side down. Bake for about 35-45 minutes. Remove it from the oven when it’s cooked through and soft, and let it cool. After squash cools, scrape the inside with a fork and place everything in a bowl. Set aside. Heat olive oil in a large skillet on medium-high heat. Add sliced zucchini and minced garlic and saute for about 3 minutes, stirring, on medium heat. Season with salt and continue cooking for another 3-4 minutes, covered, occasionally stirring, until zucchini softens and browns a bit. Add spaghetti squash to the skillet with zucchini and mix, on low heat. Add salt and pepper, to taste. Top with toasted almonds and baked chickpeas. Sweet Potato Chicken Bake

Sweet Potato Chicken Bake Recipe by Lavinia Todor Serves: 4 Ingredients 2 lb. boneless skinless chicken breasts, cut into cubes 4 small sweet potatoes, cut into 1/2″ cubes 1/4 cup olive or melted coconut oil 6 slices bacon (optional) 1 cup green onions, sliced or cubes 1c broccoli 1c red pepper 1c shredded cheese (optional) 1 tbsp. paprika 2 tbsp. garlic powder 6 tbsp. hot sauce (whichever you prefer) Sea salt and freshly ground black pepper, to taste MAKE IT HAPPEN: Preheat oven to 400 degrees. In large bowl, combine the oil, paprika, garlic powder, hot sauce, and season with salt and pepper to taste. Add the sweet potatoes and chicken, and stir to coat.  Empty the bowl into a casserole dish. Bake the potatoes and chicken for 45-60 minutes stirring every 20 minutes, until cooked through, crispy, and browned on the outside. Add broccoli and green pepper half way through. While the potatoes are cooking, fry your bacon (optional). Top the cooked potatoes with the the cheese (optional), bacon, and green onion and place back in the oven for another 5 minutes or until cheese is melted. Once the potatoes and chicken are fully cooked, remove from the oven. Serve with greek yogurt, sour cream or ranch dressing, if desired....

Garlic Herb White Fish Recipe by Lavinia Todor Ingredients: 2  fillets of white fish like Tilapia, sole, halibut 2 tbs extra virgin olive oil 3 cloves garlic, finely minced 1 tbs chopped fresh parsley leaves 1/8 tsp salt 1 tsp lemon juice 3 dashes ground black pepper Pinch of cayenne pepper, optional Lemon wedges MAKE IT HAPPEN: Preheat oven to 425°F. In a small bowl whisk together olive oil, garlic, parsley, salt, cayenne pepper, lemon juice and black pepper together. Stir to combine well. Place the fish on a baking sheet lined with parchment paper. Add garlic herb mixture onto the fish, coat well on the top and sides. Bake in the oven until fish flakes easily with a fork, depends on the kind of fish you bought. *option to broil for an additional 3 minutes for a crispier consistently.* Serve immediately with lemon wedges and preferred side dish. Breakfast cereal balls Recipe from Lavinia Todor Ingredients: 1 cup oats (ground into a flour) 1 medium banana, mashed (substatute for Apple purée) 3 tbsp almond butter( substatute for tahini if allergic to nuts ) 2 tbsp pure maple syrup 1/2 tsp baking powder 1/2 tsp vanilla extract  (optional instead of maple syrup) 1 scoop protein powder ( optional) Options for serving: Coconut milk Strawberry Banana Almonds Shredded coconut MAKE IT HAPPEN: Grind the oats into a fine flour. Preheat the oven to 200 degrees. In a mixing bowl add the wet ingredients into the dry, and stir to combine throroughly. Broccoli & Sweet Potato Tots Inspired by: Lacey Baier Recipe type: Clean, Side, Kid-Friendly, Healthy, Vegetarian MAKE IT HAPPEN: Serves: 30 tots Ingredients 5 cups raw broccoli florets (approx. 2 med. heads) 1 medium sweet potato peeled and quartered (substatute with 2 med. red potatoes) 1 large egg (or 1 egg white ) ½ cup grated parmesan (optional) 2 tbsp. italian parsley (optional) ¼ cup yellow onion, finely diced ¼ tsp. kosher salt ¼ tsp. garlic powder ⅛ tsp. black pepper Greek yogurt for dipping (optional) Instructions: Preheat oven to 400 degrees F then line a rimmed baking sheet with tinfoil or parchment paper and set aside. Before steaming the broccoli break them down into florets. To do this pull the florets apart using your hands or knife and discard the stem. Add the broccoli florets and sweet potato into a steamer basket and steam until fully tender. This should take about 8 to 10 minutes. Once tender, remove from heat and allow to cool. Chop the broccoli and potatoes very finely (very important!). You’ll need 2 cups chopped broccoli and 1 cup chopped potato.
