Stuffed Peppers

Recipe from Lavinia Stuffed Peppers Ingredients 6 Bell peppers (yellow, orange or red are best) 3 cups cooked brown rice 2 cloves of garlic, finely chopped 1 lb ground turkey 1 cup sliced mushrooms (optional) 1 cup chicken stock 1 cup tomato sauce (or homemade + extra for toping) ½ medium onion, finely chopped ¼ tsp smoked paprika ½ teaspoon salt 1 tsp pepper 1 tbsp cooking oil 1 cup water 1 cup mozzarella, shredded (optional) MAKE IT HAPPEN Preheat the oven to 375°F. Remove top of peppers,seeds and membranes; rinse peppers. Pour 1 cup of water into a glass baking dish, and arrange the six bell peppers so that they are standing in the water. Set the baking dish aside while you prepare the filling. In a skillet, cook turkey and onion (mushrooms if using) over medium heat 8 to 10 minutes, stirring occasionally, until turkey is brown; drain. Stir in the salt ,pepper , paprika, and garlic. Next add the chicken stock and the tomato sauce and combine well. Turn down the heat and add the cooked brown rice to the pan.  Stir everything together and allow to simmer for about 10 minutes. Fill each pepper ¾ full using the rice and turkey mixture. Top them off with leftover tomato sauce if available (optional). Cover the baking dish tightly with aluminum foil and place into the oven to bake for 45- 60 minutes. Once the peppers have finished cooking, uncover them and sprinkle mozzarella over each (if using). Broil for about 5 minutes to melt the cheese....

We’d be lying to you if we said you could Rev like a maniac and eat all the cheesy pulled chicken tacos all the time and feel like a million bucks.  The truth is, no workout on the planet will change the way you look and feel the way that food can.  Yes genetics play a role (don’t we all have that uncle who puts bacon on everything, smokes a pack a day, and lives to 102?) but by and large, healthy food has serious power. 2. We don’t know sh*t. We’re not sure when the world decided that personal trainers and bootcamp leaders were nutrition experts, but unless they’ve studied the field, they’re not.  We don’t tell you what to eat because we’re not food pros.  During our challenges, we always share what works for us.  Sometimes Revvers ask, why doesn’t Revkor hire a nutrition expert to plan our 8 week meals?  Two reasons: 1) we believe that if we learn and think for ourselves, we succeed  by being empowered.  2) because there is no one-size fits all way of eating.  Guys who are 200+ pounds need way more food and energy than someone half the size. We have women who are breastfeeding, menopausal, tall, small, and everything in between.  People have allergies, intolerances, likes and dislikes. We should never be letting fitness people tell us what to eat - whether you’re a Revver or not, we encourage you to really think about this piece. 3....

Live Unapologetically. If Thanksgiving is supposed to be a celebration of all we’re grateful for, why do we beat ourselves up for enjoying every minute of it? By now your Facebook feed is probably full of posts about food-regret and ways to jog off that turkey and stuffing. As most of you know, our Revkor Manifesto is: Work out. Eat clean. Live fully.  It’s not Work out. Eat Clean. Feel like crap about enjoying your life. We’re all about the Revkor Reset.   Revvers live life to the fullest…we work hard at the bands so that we can enjoy a balanced life.  We hit our workouts with positivity.  We put good effort into eating clean as best we can.  And we also embrace balance by including the other things we love into our lives! How blessed are we to have family and friends to enjoy big delicious meals with? How lucky to share fabulous evenings over good wine and conversation!  We’ve found a workout that gives us a strong, conditioned body and one of the main benefits of that is knowing that you can indulge from time-to-time because your body has become a lean and healthy magic machine!  It bounces back instantly, no matter how hard you went to town on Aunt Janet’s pumpkin pie.  Let’s say good bye to food/fun guilt…it’s pointless!   Let’s just keep moving forward, each and every day. We think September is the new January. Don’t regret a moment of your glorious summer fun!  We never feel guilty about living life to the fullest…this is why the bands exist!  Revkor is here to balance it all out. There’s a reason our manifesto is: Work out. Eat clean. Live fully. An incredible workout combined with awesome, clean food choices is our surest way to our strongest, most badass bod and our healthiest, most energetic self. But what’s all that fitness awesomeness without balanced living?  What’s summer without the ice cream truck, a pool-side margarita, a burger off the grill? Summers are SHORT so we soak it up - dock-side and deck-side - grilling good eats and cocktailing. For the final weeks of summer, we’ve been hearing you loud and clear.  It’s time for a Revkor Reset, and we don’t need a New Year’s Resolution to make that happen! Revkor: Look incredible, FEEL unstoppable!

Meet Courtney, another winner of our Revkor™ Summer Shred.  There’s a whole bunch of things we love about Courtney and high on the list is what a shining example she is to people in their early twenties.  So many of us head off to school and fall right off the rails on the fast-food and beer train, at a time in life when we should be feeling young, vibrant, and up for anything.  Packing on pounds and losing muscle early in adulthood doesn’t feel good but so many people do it, and fall into a rhythm of unhealthy living.  Not this girl - she chose goodness. Courtney went off to travel this year for a couple months, enjoying sunshine and good times but ready to get back to the bands.  Lucky to have a seriously incredible Rev-mom (Lise won our 2014 Holiday Shred!), this Shred champ and her motivating sidekick tackled the challenge with unstoppable energy and the results are obvious.  We’re so proud of you Courtney!  You’ve chosen healthy, awesome and strong. YES! “I had a lot of people tell me that doing this challenge was ridiculous & pointless because “you don’t need to lose weight”.  Well, I may appear that way because of my natural body structure (thanks mom!) however I felt in no way thin, fit, or toned like I wanted to be. This two month shred helped me get back to proper eating habits, regular exercise, working muscles that hadn’t been worked in over two months and just overall feeling better about myself!
