Meet Our Recipe Maven, Lavinia Todor! Lavinia is a mom to two little girls; a serious picture at the bands, and has a passion for sharing healthy and delicious food!  Follow her on Instagram at lavi_fitmum. I suppose it all started with my first ever Revkor Shred this past summer. I was so pumped and excited about the challenge. I primarily posted photos of my food to keep myself accountable and push myself to be creative with my meals and keep them clean. I’m the type of person that when I love something, I love it, and eat it every day. Posting a picture every day for the full eight weeks kept me determined to come up with new, quick, and easy meals that were healthy.  Suddenly I started receiving recipe questions, and it made me happy to be able to inspire  and help someone else to eat healthy. Even more motivation to keep going! Now, eating clean is just part of our lives.  As a mom to two little ones, it gives me the much needed energy to keep up. No more feeling sluggish or tired all the time. What about feeding my family?  It wasn’t a hard transition for my husband to eat clean, since he eats just about anything. My girls on the other hand are very, VERY picky eaters. Offering them a wide range of clean foods and then offering them praise when they do try something has helped gently instil good eating habits over time. Sweet Potato Chicken Bake

Sweet Potato Chicken Bake Recipe by Lavinia Todor Serves: 4 Ingredients 2 lb. boneless skinless chicken breasts, cut into cubes 4 small sweet potatoes, cut into 1/2″ cubes 1/4 cup olive or melted coconut oil 6 slices bacon (optional) 1 cup green onions, sliced or cubes 1c broccoli 1c red pepper 1c shredded cheese (optional) 1 tbsp. paprika 2 tbsp. garlic powder 6 tbsp. hot sauce (whichever you prefer) Sea salt and freshly ground black pepper, to taste MAKE IT HAPPEN: Preheat oven to 400 degrees. In large bowl, combine the oil, paprika, garlic powder, hot sauce, and season with salt and pepper to taste. Add the sweet potatoes and chicken, and stir to coat.  Empty the bowl into a casserole dish. Bake the potatoes and chicken for 45-60 minutes stirring every 20 minutes, until cooked through, crispy, and browned on the outside. Add broccoli and green pepper half way through. While the potatoes are cooking, fry your bacon (optional). Top the cooked potatoes with the the cheese (optional), bacon, and green onion and place back in the oven for another 5 minutes or until cheese is melted. Once the potatoes and chicken are fully cooked, remove from the oven. Serve with greek yogurt, sour cream or ranch dressing, if desired....

Burrito Spaghetti Squash

Recipe from Lavinia Burrito Spaghetti Squash Ingredients: 2 medium spaghetti squash 1 lb. ground turkey 1 small onion, finely chopped 2 sweet bell peppers, finely chopped 4 garlic cloves, crushed 1 cup tomato sauce 1 cup cheese, shredded 14 oz. red kidney or black bean beans, drained & rinsed 1/2 tsp. chili powder 2 tbsp. diced canned chilies or jalapeños (or to taste) 1/2 cup cilantro, finely chopped + more for garnish 1/4 tsp. salt 1/2 tsp. freshly ground black pepper Greek yogurt (or sour cream for serving) 1 avocado, cubed (for serving) MAKE IT HAPPEN Preheat oven to 400°. Cut squash in half and scoop out the seeds with a spoon. Sprinkle with salt and pepper and place squash halves cut-side down on a rimmed baking sheet. Bake for 40 to 50 minutes. In the meantime, preheat skillet on medium heat and spray with cooking spray. Add onion, garlic, bell pepper and sauté for 4 - 5 minutes or until golden brown, stirring occasionally. Add beans, chili powder, jalapeños, tomato sauce, cilantro and stir. Remove vegetable mixture to a bowl.  Keep warm. Cook turkey until thoroughly cooked through.  Combine with vegetable mixture. Remove from heat and add some of the cheese (optional) and stir. Set aside. Use a fork to scrape the squash from the shells into a bowl. Combine spaghetti squash strands with meat and vegetable mixture. Place it all in a oven friendly dish or fill each “boat” with 1/4 of the vegetable and meat mixture and top evenly with cheese (optional). Bake for an additional 5 minutes.
