Zucchini Spaghetti Squash Recipe from Lavinia Todor Ingredients: 1 large zucchini, sliced 1 spaghetti squash, medium size 4 garlic cloves, minced 1/2 cup almonds, toasted 3 tablespoons olive oil salt and pepper MAKE IT HAPPEN: Preheat oven to 450°. Cut the squash in half, scrape out the seeds. Brush oil over the cut sides of the squash as well as the baking sheet and place the squash cut side down. Bake for about 35-45 minutes. Remove it from the oven when it’s cooked through and soft, and let it cool. After squash cools, scrape the inside with a fork and place everything in a bowl. Set aside. Heat olive oil in a large skillet on medium-high heat. Add sliced zucchini and minced garlic and saute for about 3 minutes, stirring, on medium heat. Season with salt and continue cooking for another 3-4 minutes, covered, occasionally stirring, until zucchini softens and browns a bit. Add spaghetti squash to the skillet with zucchini and mix, on low heat. Add salt and pepper, to taste. Top with toasted almonds and baked chickpeas. If you’re not avoiding dairy, add some shredded cheese to the mix....

Burrito Spaghetti Squash

Recipe from Lavinia Burrito Spaghetti Squash Ingredients: 2 medium spaghetti squash 1 lb. ground turkey 1 small onion, finely chopped 2 sweet bell peppers, finely chopped 4 garlic cloves, crushed 1 cup tomato sauce 1 cup cheese, shredded 14 oz. red kidney or black bean beans, drained & rinsed 1/2 tsp. chili powder 2 tbsp. diced canned chilies or jalapeños (or to taste) 1/2 cup cilantro, finely chopped + more for garnish 1/4 tsp. salt 1/2 tsp. freshly ground black pepper Greek yogurt (or sour cream for serving) 1 avocado, cubed (for serving) MAKE IT HAPPEN Preheat oven to 400°. Cut squash in half and scoop out the seeds with a spoon. Sprinkle with salt and pepper and place squash halves cut-side down on a rimmed baking sheet. Bake for 40 to 50 minutes. In the meantime, preheat skillet on medium heat and spray with cooking spray. Add onion, garlic, bell pepper and sauté for 4 - 5 minutes or until golden brown, stirring occasionally. Add beans, chili powder, jalapeños, tomato sauce, cilantro and stir. Remove vegetable mixture to a bowl.  Keep warm. Cook turkey until thoroughly cooked through.  Combine with vegetable mixture. Remove from heat and add some of the cheese (optional) and stir. Set aside. Use a fork to scrape the squash from the shells into a bowl. Combine spaghetti squash strands with meat and vegetable mixture. Place it all in a oven friendly dish or fill each “boat” with 1/4 of the vegetable and meat mixture and top evenly with cheese (optional). Bake for an additional 5 minutes. These are raw, vegan and gluten free, and make a great treat to satisfy your clean-eating chocolate cravings.  Even though there’s no sugar added, the dates are loaded with natural sugars so enjoy in moderation.  This makes a great energy-boosting pre-workout treat. Make it happen: Square: 1.5 cups whole raw almonds 1.5 cups organic oats 3/4 cup organic unsweetened shredded coconut 1/2 tsp sea salt 35 Medjool dates, pitted and roughly chopped (3 cups) 1/4 cup coconut oil 1/2 cup water Chocolate Topping: 1/3 cup coconut oil 1/3 cup raw cacao powder 3 tbsp maple syrup or honey vanilla For the squares: Throw raw almonds, oats, and dates in food processor, mix until it becomes small crumbs. Mix in coconut, coconut oil, and water slowly.  Add only as much water as you need to help the mix become sticky. Spread over parchment-lined 8″x8″ cake pan and put in the freezer for an hour. Meanwhile… For the chocolate: Over very low heat in a small saucepan, add all ingredients and stir thoroughly to combine.  Pour slowly over well chilled and set squares.  Option to add a good sprinkling of pink salt.  Return to the freezer for one hour.
