Sweet Potato Chicken Bake Recipe by Lavinia Todor Serves: 4 Ingredients 2 lb. boneless skinless chicken breasts, cut into cubes 4 small sweet potatoes, cut into 1/2″ cubes 1/4 cup olive or melted coconut oil 6 slices bacon (optional) 1 cup green onions, sliced or cubes 1c broccoli 1c red pepper 1c shredded cheese (optional) 1 tbsp. paprika 2 tbsp. garlic powder 6 tbsp. hot sauce (whichever you prefer) Sea salt and freshly ground black pepper, to taste MAKE IT HAPPEN: Preheat oven to 400 degrees. In large bowl, combine the oil, paprika, garlic powder, hot sauce, and season with salt and pepper to taste. Add the sweet potatoes and chicken, and stir to coat.  Empty the bowl into a casserole dish. Bake the potatoes and chicken for 45-60 minutes stirring every 20 minutes, until cooked through, crispy, and browned on the outside. Add broccoli and green pepper half way through. While the potatoes are cooking, fry your bacon (optional). Top the cooked potatoes with the the cheese (optional), bacon, and green onion and place back in the oven for another 5 minutes or until cheese is melted. Once the potatoes and chicken are fully cooked, remove from the oven. Serve with greek yogurt, sour cream or ranch dressing, if desired....

They’re re really that good. Fuel your craving for a Mexican feast with these guilt-free bad-boys!  Super easy, super clean, and awesome as left-overs. Makes the perfect, high protein, post-Rev workout muscle repair meal.   MAKE IT HAPPEN: Poach or grill 3 chicken breasts until cooked through. Let cool slightly, then put in a mixing bowl. Shred the chicken using two forks, pulling outward. Meanwhile… In a medium saucepan over medium heat, melt 1 tbsp of coconut oil. Add 1/2 diced red onion. 1 clove crushed garlic. Sautee till onion is soft and translucent. Add: 3 medium sized crushed tomatoes ( I pulled mine off the vine from the garden and zipped in the Vitamix) 1.5 tsp cumin 1 tsp chili minced chipotle pepper (optional) Let simmer uncovered for about 10 minutes…longer will dry the chicken out.   Serve on fresh lettuce leaves with shredded old cheddar, fresh guac, tomatoes, lime, and shredded cilantro!  Whatever floats your boat. Post-Rev Recovery Family Dinner

KEEP IT SIMPLE. That should be your Revkor™ Shred mantra.  Eating clean is not complicated, and you don’t need to put together elaborate meal plans to stay on track.  This super-simple post-workout meal is perfect for the whole family. Make it happen: In a sautee pan, add a tbsp of coconut oil over medium heat and sauté three sliced shallots and one clove of garlic.  Add a 1/2 cup of red wine, juice of half an orange and 1 tbsp of real maple syrup.  Reduce. Place 4 chicken breasts in a roasting pan and cover with the mixture.  Cover with foil and bake at 350…remove foil for last 10 minutes.  Serve when juices run clear with a side salad - we used fresh greens with shredded beets and carrots, cucumber and green onions.  Our simple go-to vinaigrette: equal parts EVOO, lemon juice and apple cider...
