HP Curl Fries + Egg Breakkie You’ve gotta be a Korboarder to get it ;). Give your guns the dream recovery breakfast!  WABAM. Recipe and photo from Lavinia Todor MAKE IT HAPPEN Ingredients: 2 large sweet potatoes 2 tsp paprika 2 tsp olive oil 1 tsp sea salt ⅛ tsp garlic powder ⅛ tsp onion powder Directions: Preheat oven to 400. Line 2 baking sheets with parchment paper. Use spiralizer to create the sweet potato curls (you can often buy sweet potato noodles in the produce section now! Booyah!) Mix together seasoning ingredients in large bowl and toss with sweet potato. Spread evenly on baking sheet. Bake for  about 15 minutes, remove from oven and flip, then place back in the oven for 15 minutes, or until they start to become crispy in places. Serve with a fried fresh egg - we love a duck egg!  Load the plate up with fresh chopped veggies and WABAM! A killer weekend breakfast after a hard-core morning...

Asparagus Salad Recipe form Lavinia Todor Ingredients: 2 lbs jumbo asparagus ¼ cup pesto (more to taste) Topper options: Cooked, crumbled bacon Cooked peas Cooked edamame Graded romano cheese (or cheese of choice) MAKE IT HAPPEN: Peel asparagus into noodles using a grater, or thinly slice into long strips. In a medium pan sauté asparagus for a minute or so. You want them to still be crispy. Add to individual bowls, mix in pesto to taste and add preferred toppers....

Cozy Chicken + Potato Stew Recipe from Lavinia Todor Ingredients: 1 lb chicken thighs 4 potatoes, peeled and cubed 5 cups chicken broth 3 carrots, diced 1 can crushed tomatoes 2 stalks celery, diced (optional) 1 yellow onion, diced 2 bay leaves 1/2 cup chicken marinade (use preferred one) 1/4 tsp pepper, or to taste 1 tsp smoked paprika 1 tsp salt, or to taste 1 tsp oregano MAKE IT HAPPEN: Place all ingredients in your crock pot. Turn to low heat and cook for 7-8 hours. After 8 hours, remove the chicken thighs and shred using a fork or cut chicken into small pieces instead. Add the cut (or shredded) chicken back into the stew. Option to season with additional salt and pepper to taste....

PB & J Oats! Recipe by Lavinia Todor Ingredients: 1 cup rolled oats 1 cup cashew milk 1 ripe banana 2 tbs jam (use favorite jam) 2 tbs creamy peanut butter 1tbs chopped almonds (or unsalted peanuts) pinch of salt (optional) pinch of cinnamon MAKE IT HAPPEN: In a small saucepan combine oats, milk, mashed bananna, salt, cinnamon over medium-high heat. Simmer until milk has absorbed into the oats, stirring frequently to prevent burning(5-8 minutes). Stir in one tablespoon of peanut butter. Transfer into a bowl, swirl in the remaining peanut butter and jam. Top it off with almonds or unsalted peanuts....

Zucchini Spaghetti Squash

Zucchini Spaghetti Squash Recipe from Lavinia Todor Ingredients: 1 large zucchini, sliced 1 spaghetti squash, medium size 4 garlic cloves, minced 1/2 cup almonds, toasted 3 tablespoons olive oil salt and pepper MAKE IT HAPPEN: Preheat oven to 450°. Cut the squash in half, scrape out the seeds. Brush oil over the cut sides of the squash as well as the baking sheet and place the squash cut side down. Bake for about 35-45 minutes. Remove it from the oven when it’s cooked through and soft, and let it cool. After squash cools, scrape the inside with a fork and place everything in a bowl. Set aside. Heat olive oil in a large skillet on medium-high heat. Add sliced zucchini and minced garlic and saute for about 3 minutes, stirring, on medium heat. Season with salt and continue cooking for another 3-4 minutes, covered, occasionally stirring, until zucchini softens and browns a bit. Add spaghetti squash to the skillet with zucchini and mix, on low heat. Add salt and pepper, to taste. Top with toasted almonds and baked chickpeas. If you’re not avoiding dairy, add some shredded cheese to the mix....
