Recipe from Lavinia Stuffed Peppers Ingredients 6 Bell peppers (yellow, orange or red are best) 3 cups cooked brown rice 2 cloves of garlic, finely chopped 1 lb ground turkey 1 cup sliced mushrooms (optional) 1 cup chicken stock 1 cup tomato sauce (or homemade + extra for toping) ½ medium onion, finely chopped ¼ tsp smoked paprika ½ teaspoon salt 1 tsp pepper 1 tbsp cooking oil 1 cup water 1 cup mozzarella, shredded (optional) MAKE IT HAPPEN Preheat the oven to 375°F. Remove top of peppers,seeds and membranes; rinse peppers. Pour 1 cup of water into a glass baking dish, and arrange the six bell peppers so that they are standing in the water. Set the baking dish aside while you prepare the filling. In a skillet, cook turkey and onion (mushrooms if using) over medium heat 8 to 10 minutes, stirring occasionally, until turkey is brown; drain. Stir in the salt ,pepper , paprika, and garlic. Next add the chicken stock and the tomato sauce and combine well. Turn down the heat and add the cooked brown rice to the pan.  Stir everything together and allow to simmer for about 10 minutes. Fill each pepper ¾ full using the rice and turkey mixture. Top them off with leftover tomato sauce if available (optional). Cover the baking dish tightly with aluminum foil and place into the oven to bake for 45- 60 minutes. Once the peppers have finished cooking, uncover them and sprinkle mozzarella over each (if using). Broil for about 5 minutes to melt the cheese....

Creamy Leek + Potato Soup

Time to get cozy with this super-rich and creamy soup that you’d swear is loaded with cream!  Roasting the veggies creates a surprising richness to this yummy soup, perfect for a cozy night at home with a good book OR for entertaining!  This recipe is clean, Shred friendly, and vegan of you replace the chicken stock with vegetable. MAKE IT HAPPEN: Preheat oven to 425. Chop: 5 yellow potatoes, skin on 2 fresh leeks 1/2 yellow onion Toss veggies in a large bowl with a little sunflower oil, salt, pepper, 2 cloves of crushed garlic, and tsp ground rosemary and sage. Spread on a parchment covered baking sheet and roast about 30 minutes or until toasty and golden. While your spuds are roasting – Chop: 1 red onion 1 leek Sautee in a large pot with one tablespoon of organic butter and a dash of sea salt until translucent. Add your roasted veggies to your large pot of sautéed onions along with: 1 can good quality coconut milk 5-6 cups of good quality chicken stock Add rosemary and sage to taste along with a dash of chilli powder and one tablespoon of real maple syrup. Heat through till it bubbles over medium heat.  Cover and simmer on low for 15 minutes. Transfer to your blender in small batch and blend until completely smooth. Serve on its own or topped with a little goat cheese.  ...

Whether you’re shredding with revNATION or not, you can never go wrong with a choco/pb treat that is 100% clean! This Chocolate Peanut Butter Pudding can also double as ganache in any vegan/clean baking invention you tackle in your kitchen, it’s smooth, rich and curbs even the meanest chocolate craving.  Bonus: you don’t have to be a whiz in the kitchen.  We’re pretty sure your even cat could nail this recipe. Make it happen: In your blender: 1 banana 2 avocados 3/4 cup raw cacao powder 1/2 cup all natural peanut butter (unsweetened, smooth or crunchy) 1/2 cup maple syrup 1/4 coconut milk (more if needed) 1 tablespoon vanilla sea salt to taste Zip around in your blender.  Use a spatula to pour into small bowls or ramekins and refrigerate for 2+ hours. There’s a decent amount of natural sugar in this baby so enjoy as a well deserved treat! Happy Shredding...
